I know, I know, me and Nutella….yet again! But this is a brainstorm I had based on one bad experience with a Nutella Bread Pudding recipe. One great taste of chocolate and banana bread pudding and the need to enhance both recipes!
So to elevate let’s start with Banana Bread–let’s elevate with Nutella along with the chocolate and take it over the top with mashed bananas!
Here is the result–call it a mash up of several recipes and ideas and just plain old stubbornness! (Two “n’s” really?)
This is just a ton of deliciousness baked in extra large muffin tins, cause a standard muffin size would just leave you wishing for MORE YUM!
Here’s the picture right out of the oven:
Here’s the Recipe:
Nutella/Banana/Chocolate Banana Bread Bread Pudding
6 Slices Banana Bread ¾”-1” thick
4 Ripe Bananas
1/3 cup Nutella
3 Large Eggs
1 cup Whole Milk
½ teaspoon Cinnamon
1 teaspoon Vanilla Extract
1/2 cup Mini Chocolate Chips
Cut the banana bread into small cubes.
Place onto a baking sheet and bake at 350°F for 5 minutes to create dry stale bread.
In a large mixing bowl mash the ripe bananas with a potato masher.
Add in the Nutella and mix with the masher until blended with the potato masher.
Add the eggs and mix until blended, add the milk, cinnamon, and vanilla extract and stir.
Once fully mixed add your bread cubes and stir until the bread is totally wet and let it soak for 10 minutes. Stir again and spoon mix into a 6 cup extra large muffin tin. Sprinkle Mini Chocolate Chips on top.
Bake at 350°F 25-30 minutes until set. Let rest for 10 minutes remove from the tins and serve immediately.
Serve with Vanilla Gelato and Drizzle of Salted Caramel!
