A Couple of Great Dishes

Tonight’s dinner was two new tasty dishes,

Salad was Arugula, Strawberries, Red Onion, Crumbled Sauteed Prosciutto and shaved Parmesan.  I’ve never tried the famous strawberry and spinach salad, just never thought I’d like it.  But something struck me to think this was a nice blend of ingredients I had on hand.  I marinated the red onion longer than called for then added the strawberries for 15 minutes as listed in the directions.

I didn’t use Feta or Goat as we were having Gorgonzola & Walnut Ravioli in a Spinach Cream Sauce.

The sauce was easy peasy, Sauteed Garlic in butter/olive oil combo, add shopped fresh spinach, deglazed with vermouth, added heavy cream a little ground nutmeg and ground black pepper, boiled to thicken added shredded Parmesan and the Ravioli and served!  Breadsticks rounded out the meal and we were very satisfied!
