Last year at this time I was all agog about BACON JAM (click for recipe). And at some point I put it on top of Pimento Cheese on Crostini and ran it under the broiler–great results! And I’m intending to one day very soon whip up a batch of Bacon Jam for the Holidays. But meanwhile here’s a quick way to get bacon into your Pimento Cheese: Start with Trader Joe’s Bacon Cheddar Cheese! You can see another blog post and pics of the cheese here.
In the Kitchen:
Shredded a chunk of the Bacon Cheddar, mixed with whipped cream cheese and dash of mayo, salt & pepper, diced roasted red pepper and dash of Tobasco! I then spread it on Gluten Free Toast and later celery sticks!
