Lunch on Halloween, home alone, time on my hands, call it whatevah!  Mini Photo shoot, just for fun and finally: Leftover Elevation!

A few nights ago I needed a quick side dish to accompany some leftovers we had planned for dinner, and we were saladed out!  I know that’s not a real word, but basically we’d eaten salads at the last four of six meals!  So grabbing things in the fridge and pantry I came up with a quick and easy saute of Onion, Garlic, Red Bell Pepper, Red Pepper Flakes, Cubed Zucchini and Cherry Tomatoes, and at the last second I added in a drained and rinsed can of Cannellini Beans. Drizzled with Olive Oil & Balsamic Vinegar at the table.  It was like a warm bean salad.  Hit the spot.

So what to do with the leftovers was my quandary today, craving something warm for lunch.  Found some leftover canned diced tomatoes in tomato juice, so I added them to the veggies and a bit of vegetable broth and suddenly I had Soup!

Smelled wonderful, a side of Panera Bread’s 3 Cheese Bread and it was very satisfying first helping, but then maybe the photo shoot could get extended and play with the colors, oops meanwhile I finished the toasted bread!  Oh well, second helping gets bread sticks! LOL!

It was fun lunch tasty and entertaining, a nice break from menu planning.  Quickly posting and I promise to get back to work!
