Lickety Split Dinner

A real day off spent enjoying the day.  Lunch was bagels one with olive cream cheese for Nana and mine was with Supreme chicken salad with apples, raisin and dried cranberries.  After lunch we went to see a movie:  PEACE, LOVE & MISUNDERSTANDING with  Jane Fonda, Catherine Keener, Elizabeth Olsen and of course our friend Nat Wolff.  Nat plays a nerdy, awkward teenage film maker and younger brother to Elizabeth Olsen’s character, with Catherine Keener and Jane Fonda as his uptight, lawyer mother and stuck in the 70’s pot-smoking, hippie grandmother!  It’s a fun movie and we truly enjoyed watching Nat on the big screen!

We did a variety of errand running after the movie and enjoyed visiting the air-conditioned stores in our 90º+ heat.

So there were options for dinner most which included the usual standing over a hot stove for some time.  After cooking 25 meals in my clients’ unairconditioned, third floor walkup with skylights, apartment in the 93º yesterday, I wasn’t excited to even heat anything up!  Cold supper sounded like a great idea.

The result:

Perfect Summer Soup Dinner

Chilled Roasted Red Pepper & Tomato Bisque (Pacific Foods Organic version)

Garnished with chopped cucumber, yellow bell pepper, scallions, cilantro, chopped avocado and lime, and for me a small amount of chopped roasted jalapeno.

On the side: Wedges of Beefsteak Tomato and Avocado, Kalamata Olives, Burrata Cheese and Prosciutto all topped with Basil Chiffonade and Kalamata Olive Oil.

A slice of Garlic Bread and dinner was light, yet satisfying, cool and delicious.
