Roaming the aisles of Fairway yesterday I found Pea and Ricotta Fresh Ravioli made with Basil Pasta! Brought it home and tried to figure out a sauce, I had also bought fresh peas and fresh ricotta and mint. The result is Mint Pesto stirred into the fresh Ricotta topped with the Ravioli and fresh peas, a bit of pasta water to make the sauce smooth and some extra pesto and chopped mint.
This was delicious and dead easy!
The pesto was mostly mint with a bit of basil and parsley, lemon juice, lemon zest, garlic paste, Parmesan cheese, Pine Nuts and olive oil.
Tossed salad with Roasted Garlic Vinaigrette and some Un-Oaked Chardonnay and we called it a great meal!
