Dr. Leftover makes a visit to our kitchen!

One of my alter egos entered the kitchen to make dinner tonight!  Yep, that’s one of my alter ego’s Dr. Leftover figures out what to make from food fragments in the fridge and pantry!  Different from Dr. Pantry Raider who creates complete meals from items stored in the pantry, freezer and fresh drawers of the fridge!

So Dr. Leftover found the last few slices of the Easter boneless Leg of Lamb, 1/2 of a very large Red Onion, 1/2 Orange Bell Pepper, a few cloves of garlic, a smidgen of dried Chili Peppers, 1/2 jar of pitted Kalamata Olives, some dried Oregano, the last bit of a tube of Double Concentrated Tomato Paste, a generous squeeze of Anchovy Paste, Kosher Salt and Freshly Ground Black Pepper, a jar of wonderful Rao’s Marinara and a handful chopped Parsley!  Voila Lamby Puttanesca!  Add some Barilla Whole Grain Angel Hair and some leftover tossed salad with tons of fresh veg and a few bread sticks and you’ve got yourself DINNER!
