Bits ‘N’ Pieces Nachos for Lunch

Second Helping!!

Digging around for something other than T-day Leftovers for Sunday Lunch I got a craving for Nachos.  But since there wasn’t a plan in place there weren’t necessarily the typical ingredients on hand!  But not daunted by that issue I was able to come up with something that was different and delicious than what you might think of!

Salsa was created from:

Leftover Trader Joe’s Roasted Corn; 1/2 red onion; 1/2 can of chopped green chiles; 1/2 can diced tomatoes; chopped mint; chopped pimento stuffed olives; cumin; coriander; alleppo pepper and cider vinegar!  (Lime and cilantro were missing and would have been welcome additions!)

The meat component was a mini meatloaf with tomato and cheddar glaze!

Blue Corn Tortilla Chips and Trader Joe’s Corn Dippers formed the base and shredded cheddar the glue!

At the table we garnished with hot sauce and leftover Guacamole Hummus from Trader Joe’s a delightful discovery!

Wow was the reaction and we cleaned our plates and ended up with less containers in the fridge!

So this really helped as now we will actually look forward to T-day Leftovers for Dinner!
